Classic Pairings BORDEAUX Tasting from the Women of Wine

On Monday, November 2nd, please join the Women of Wine (WOW) at Ralph Smith Photography’s gorgeous Bellaire-area studio (5226 Elm  Houston, Texas   77081) for this special wine and food pairing event featuring twelve Bordeaux wines selected by Spec’s fine wine buyer Bear Dalton (that would be me) paired in five flights with assorted bites prepared by master Chef of France Frederic Perrier for this unique tasting and class.

Women of Wine is an organization of women in-and-around-the-wine-industry devoted to raising money and awareness for the Houston Area Women’s Center.

Ralph Smith is generously donating his gorgeous space, fifty-two-twenty-six elm, for our event. This AIA award-winning building is well-known amongst Houston architects. The building’s innovative use of materials and elegantly designed interiors combined to win the American Institute of Architects prestigious “building of the Year” design award for Texas.

Frederic Perrier, chef/owner of Aura Brasserie and one of only three certified Master Chefs of France in Houston (or Texas for that matter), will provide signature dishes to accompany the wines of Bordeaux. Chef Perrier is a native of Lyon where he apprenticed at the age of 15 under Georges Blanc at Vonnas. He eventually moved to New York where he gained national recognition as Executive Chef of La Cite and splashed onto the Houston scene as Executive Chef/Co-owner at Grille 5115 and then Café Perrier. Since 2007 Chef Perrier has been offering his American and French cuisine at Aura Brasserie in Sugarland.

Bear Dalton is the fine wine buyer for Spec’s, but his knowledge of wine extends beyond this auspicious post. He travels extensively throughout the wine regions of the world tasting in excess of 9,000 wines each year as he teaches, writes and consults about wine. Equally at home on Loop 610 and the Rocade (the “loop” around Bordeaux), he doesn’t need a GPS to find his way around Bordeaux.

On Monday October 19th at 7pm, please join Spec’s in welcoming a trio from Bordeaux in Stephan von Niepperg (Ch. Canon La Gaffeliere as well as Ch. d’Aiguilhe and Clos de l’Oratoire), Patrick Maroteau (Ch. Branaire Ducru), and Ludovic Frandin (Ch. Smith Haut Lafitte) to Houston for a Bordeaux Trio Dinner at the new Houston Club featuring wines from these great properties and Houston Club chef Doug George’s wine-friendly menu.

2012 Bordeaux and Champagne Tasting At the Crystal Ballroom at the Rice

On Tuesday, October 20, 2015, Spec’s will host a number of chateau owners, directors, and/or winemakers presenting 30 mostly Cru Classé and second label Bordeaux wines all from the 2012 vintage along with 17 Champagnes in a standup-and-walk-around tasting format. This is similar to our wildly popular January Bordeaux event but with a mostly different lineup of wines – and, of course, with Champagne. If you are a wine lover in or near Houston, this is a “don’t miss” event.

The tasting will open at 4:30pm and run until 8:30pm, giving tasters ample time to taste the wines and visit with our guests. The tasting will include a spread of artisanal cheeses and breads chosen to help absorb the wines and refresh the palate. We will taste from Riedel Degustazione (tasting) glasses. The 2012 Bordeaux and Champagne Tasting will cost $80.00 total per person cash ($84.21 regular).
