		<description><![CDATA[Excellent summary on decanting wines. Want to have two different 750ml wines with dinner and not be &quot;over served&quot;? With proper decanting it&#039;s easy for two people to enjoy a glass of white wine first and then switch to a glass of red for a main course. 
Here is the easiest way I know. Save six 375ml sized bottles with screw cap closures. The screw cap bottle makes this soooo easy. Open your first 750ml wine and immediately fill the 375ml bottle to the lip of the bottle and seal with a screw cap closure and store in the refrigerator. Without any air in the bottle, gassing isn&#039;t necessary. The wine will keep for a week in the refrigerator. From time-to-time, replace the screw caps (750ml screw caps work fine on 375ml bottles) when they begin to leak or do not tightened when screwed onto a 375ml bottle. Repeat the process as needed. Be careful to prevent people from discarding the 375ml bottles when consumed. Kyle Britt]]></description>

Bottle variation is an interesting subject. I recall we had some bottle variation in the 2011&#039;s we tasted last week. I&#039;d be curious to open 90 bottles of any chateau and see how they came out as well. And sir, you truly are a taster with a capacity for tasting a lot of wines in one sitting, witnessed  by the nearly 100 wines we tasted the last day in Bordeaux .

And yes the ’11 d’Yquem , I can still taste it – very long finish – some say the wine of the vintage…
